May is National Egg Month
The Incredible Egg
It's almost impossible to cook or bake without eggs. And, how many days during the week do you eat eggs, whether scrambled, fried, poached or in a sandwich? But, have you ever stopped to think about the difference between white and brown eggs? Nutritionally there is no difference; they just come from different breeds of hens. Or why are some hard-cooked eggs so hard to peel? Because they are too fresh!
At 70 calories, a large egg contains 13 vitamins, is one of the only natural resources for vitamin D, and contains just 6% of the daily value for fat.
In 2020, Mississippi had 234 farms with 100 or more layers. These layers produced 1392 million eggs!
