What's happening this week:
Well, here we are at the penultimate newsletter for me. I can not believe that next week's newsletter will be my last one! I am truly not sure what I will do with all of this rambling in my head every week. My poor wife will need to muzzle me after only a week. At least when I am talking I won't be spelling things wrong as I do.

This Friday is Cinco de Mayo and we will have plenty of options for you to come in and grab so you can make a dinner in celebration. And since the holiday falls on a Friday, I would recommend that you keep it down if you are in early on Saturday. A night of tequila-fueled celebration sure makes for a big headache the next day.

The theme of this week's sales at Casey's is BEEF. With the prices of beef this year still rising steadily we are doing our best to get you at least an item or 2 each week that is beef, but honestly, that is becoming more difficult each week.

First up this week are the Boneless Top Sirloin Steaks. Now this is a steak, much like a flank steak, that I tended to shy away from due to my fear that it was going to be tough. As it turns out, I was missing out on a very tender, very tasty steak for far too long. The Boneless Top Sirloin has become a staple when it comes to grilling steaks at my house these days and once you try one this week, I am sure you will agree.

Next up is one of our signature items, the Grillmasters. Over the years I have absolutely been astounded how many of these burgers we sell. On some holiday weekends we could sell around 300 pounds of these and if you do the math we sell about 900 1/3# Grillmasters in 2 days! I am betting with the weather that we have had lately we will not sell that many this weekend but I bet its pretty close!

For this week's first item we let Kevin pick and he came up with a real winner! The Marinated Pork Tenderloin Skewers are little tasty delights that are almost as easy to cook as they are to eat. This week we will have the 2 different flavors, the Smokehouse and the Eddie's Tenders. The Smokehouse is made with a smoky BBQ rub that we apply copiously and the Eddie's Tenders are marinated in our soy sauce, lime juice, cilantro, brown sugar & garlic marinade (it's our best marinade!).

Next up this week is one of the butcher's favorite cuts of beef. The Sirloin Tri Tip can certainly do just about anything! It can be baked, grilled, pan seared or crock/instant potted but for this week in honor of Cinco de Mayo I found this recipe for Tri Tip Steak Tacos that looks pretty darn delicious.

I am judging by this week's sale that Nicole is completely fed up with me complaining about the weather and she is doing her best to get me to stop by having the Homemade Summer Salad on sale and this salad truly epitomizes summer. With fresh cucumbers sliced to perfection, wedges of tomato and some red onion all topped with a super vinaigrette style dressing, this salad will make you think that you are on a lanai next to a pool. All you will need is a tropical cocktail to make it perfect!
