Cook with Us: Recipes from Brands We Love

We don’t just love stocking our shelves with these incredible brands, we love cooking with them, too! Here are a few delicious recipes perfect for the end of summer and designed to bring out the absolute best in your favorite kitchen tools.

Smithey's Grilled Panzanella

Serves 4-6

Ingredients

  • 1 c. halved cherry or grape tomatoes
  • 1 T. finely chopped shallot
  • 2 T. sherry vinegar
  • 3-4 slices sourdough bread, cut 1-inch thick
  • 3 T. olive oil, divided
  • 2 cloves garlic
  • 1 (12 oz) jar marinated artichoke hearts, drained
  • 1 zucchini, cut in half lengthwise
  • 1 orange bell pepper, stem and seeds removed, cut into quarters
  • 3 oz. bocconcini mozzarella
  • 1/4 c. torn basil leaves

Directions

  1. Combine tomatoes, sherry vinegar, and shallot in the bottom of a large mixing bowl. Let marinate while you grill the bread and vegetables.
  2. Preheat Smithey's No. 12 Grill Pan over medium heat for about 3 minutes.
  3. Brush both sides of the bread with 1 tablespoon of the olive oil and season with salt. Grill over medium heat for 5-6 minutes, turning occasionally until golden brown and slightly charred. Remove from heat and rub on both sides with garlic cloves until fragrant. Cut into large dice; you should have about four cups of grilled croutons.
  4. In a medium bowl, toss zucchini, bell pepper, and artichokes with 1 tablespoon of the olive oil and season with salt and pepper. Add vegetables to the Cast Iron Grill Pan and grill until tender and slightly charred, turning occasionally, about 5 minutes.
  5. Cut the vegetables into large pieces about the same size as the bread. Add vegetables and grilled croutons to the mixing bowl with the tomatoes. Add remaining tablespoon olive oil and toss to combine. Stir in bocconcini and fresh herbs. Serve immediately.

Le Creuset's Sauteed Corn Pasta

Serves 4-6

Ingredients

  • 3 T. olive oil, divided
  • 4 ears fresh corn, shucked, kernels removed
  • 3 cloves garlic, minced
  • Kosher salt and freshly cracked black pepper, to taste
  • 6 oz Cotija cheese, finely crumbled (feta is a great substitute)
  • 1/2 c. finely sliced scallions, green parts only
  • 1/2 c. (1/2 ounce) fresh cilantro leaves, finely chopped
  • 1 jalapeño pepper, seeded and stemmed, finely chopped (optional)
  • Fresh lime juice, to taste
  • Chile powder, to taste
  • 10 oz. short pasta

Directions

  1. Heat 2 tablespoons of the olive oil in your Le Creuset Signature Oval Casserole over medium-high heat until shimmering. Add the corn kernels in a single layer, season with salt and pepper, and let them sit undisturbed for 2 to 3 minutes so they get some real golden color on them. Toss and continue cooking for another 2 to 3 minutes.
  2. Add the garlic and the remaining tablespoon of olive oil and sauté for another minute until fragrant. Remove from the heat and set aside directly in the casserole.
  3. Meanwhile, cook the pasta according to package directions until al dente. Drain and add it straight into the Oval Casserole with the corn.
  4. Add the cheese, scallions, cilantro, jalapeño, lime juice, and chile powder to the casserole and toss everything together. Taste and adjust seasoning with salt and more chile powder as needed. Bring the whole dish straight to the table and serve immediately.
