Blueberry Lemon Pie

Ingredients

  • Pillsbury or Trader Joe's prerolled pie crusts ( or make your own)
  • 6 cups of blueberries ( I combine fresh and frozen)
  • 3/4 cup sugar
  • 5 TBLS cornstarch
  • grated zest and juice of one lemon
  • 2 TBLS of cold unsalted butter cut into this pats
  • heavy cream to brush top of pie

Directions

  1. Take your pie crusts out of the frig and let come to room temp. (If using Trader Joes crusts, they are ALWAYS broken when they come out of the box! Leave them between the plastic wrap and roll them until the cracks are sealed again)
  2. Preheat oven to 350
  3. Toss the blueberries with the sugar, lemon juice and zest, and cornstarch.
  4. Place one pie crust in your 9" or 10" pie plate Press dough into pan and leave overhang.
  5. Put blueberry mixture into the crust. Tuck the thin pats of butter under the berries.
  6. Place second pie crust on top and trim overhangs if needed, to 1/2". Roll up the edges of the crust and crimp with your fingers to seal. Cut 3 slits in the top crust.
  7. Brush top of pie with the heavy cream.
  8. Place pie on a baking sheet/stone and bake for 55-60 minutes,***Check the crust edges after 40 minutes-- If they are browning too quickly, cover them with tin foil.
  9. Pie should be bubbling when it is done.
  10. Remove from oven and cool.
