Tucson Federal Credit Union -- Multicultural Empowerment Center
Frontline has the privilege of getting to be apart of a truly special project with Tucson Federal Credit Union. TFCU is one of Frontline's most loyal and trusted clients and when we were approached by the team over at TFCU about the project, we knew we couldn't pass on this opportunity. Their mission is to give back to the local community in Arizona, through education and a helping hand. TFCU is embarking on this journey and doing so without any financial gain to the Credit Union, a selfless act to create a space that will have a long lasting impact on the community they so cherish.

It will be known as, The Multicultural Empowerment Center and will function as a space to educate those who are less fortunate on managing their finances. It will act as a support system for the under privileged in the community by providing a space to learn, educate, and grow the mindsets and knowledge of the local community. Executive Vice President/ Chief Operating Officer Matthew Gaspari of TFCU who is spearheading the efforts had this to say, "The Empowerment Center concept stemmed from our strategic planning session two years ago, and the idea is to be a conduit in the community, filling the gaps in either services or education that aren’t handled by other non-profit agencies." He went on to say that "the focus is on financial education such as the evolution of banking, products and services, credit, setting financial goals and budgeting."

Frontline will take the role of General Contractor for the project, and will be donating labor and resources at no cost to the project. We want nothing more than to be an ally in bringing this vision to life. It goes beyond simply making a profit. We recognize what amazing potential this space has for the local community and are grateful to be apart of such a powerful mission. If you needed something good to read coming off a year that was filled with a great deal of uncertainty and hardship, than this is it. Stay tuned in the coming editions to be updated on the highly anticipated finished product to be completed this year.

The Recipe

What's Needed:
Large Frying Pan
Spatula
Wooden Spoon
Medium Size Colander
Medium Size Bowl (To set colander in)

Ingredients:
1 lb Jimmy Dean Sausage.
1 Tablespoon cooking oil (Wesson)
2 Heaping tablespoons of Gold Medal All Purpose Flour.
Medium Size Colander
2 Cups 2% Milk (Can use whole milk or fat free)
Salt and Pepper
1 Roll of Pillsbury Grand Flaky Biscuits
(I know Grandma Ruby would give me the look for not making homemade biscuits)

How It's Made:
  • Cook the sausage over medium heat, until you don’t see any pink left in the meat. Transfer the sausage into a colander and drain the grease into a bowl (be sure and save the grease)

Note: Now is a good time to put the biscuits in the oven. They take about 12 to 14 minutes

  • Add 1 tablespoon of cooking oil I prefer canola oil into the pan.

  • Pour drippings into the pan and set to medium low heat. Add the two (2) heaping tablespoons of flour to the hot oil and mix until the oil and flour have mixed to a light pasty consistency. (If the roux has to much oil add a little more flour) The color should be a light beige.
  • Turn the heat to medium and add 1 cup of 2% milk stirring constantly. Add the milk slowly to mix with the roux. This will prevent clumps and a nice creamy gravy. Keep stirring!
  • Add the second cup of milk. Keep stirring and let come to a slight boil. You will notice it start to thicken. You can add more milk to make the gravy lighter or to reduce the thickness. Do Not add more flour.
  • Add the cooked sausage back into the frying pan with gravy. Cook for another 3 or 4 minutes. Keep stirring. (I know I know)
  • This is the important part. Now you salt and pepper to taste. Salt to taste, and don’t be shy with the pepper.
  • Split the biscuits and spoon on the sausage gravy. Add couple of eggs if you wish. Tabasco never hurts!

Enjoy a nice morning of true comfort food!
