Blueberry Cobbler
(Sara's kids favorite dessert)

For the filling
½ cup granulated Sugar
1 Tbsp. Cornstarch
Pinch Ground cinnamon
Pinch of Kosher Salt
6 cups Fresh Blueberries
1 Tbsp. Lemon Juice

For the topping
1 cup All-Purpose flour
½ cup granulated Sugar
1½ tsp. Baking Powder
¼ tsp. Salt
⅓ cup Heavy Cream
¼ cup Unsalted Butter, melted
½ tsp. Pure Vanilla Extract
2 tsp. granulated Sugar(for sprinkling)

Instructions

Preheat oven to 375 degrees F. Butter an 8 inch square baking dish or skillet.

Filling
Whisk the sugar, cornstarch, cinnamon and salt together in a large bowl. Add the blueberries and mix gently until evenly coated. Add lemon juice and mix to combine.
Transfer the berry mixture to an 8-inch square baking dish (can also use a 9-inch deep-dish pie plate or 10-inch cast iron skillet).

Topping
Whisk the flour, sugar, baking powder and salt together in a large bowl. Whisk the heavy cream, melted butter and vanilla together in a small bowl. Add the wet ingredients to the dry and stir until just combined and no dry pockets remain.

Assemble and Bake
Scoop the dough into 8 equal pieces and place on the filling, evenly spaced (they should not be touching). Sprinkle each mound of dough evenly with the sugar.

Bake until the filling is bubbling and the top is golden brown and cooked through, 35 to 45 minutes, rotating the pan halfway through baking. Transfer the pan to a wire rack and let cool for at least 20 minutes; serve warm or at room temperature. The blueberry cobbler can be stored, covered, at room temperature for up to 3 days.

Baby Yoda Cocktail

3/4 oz Dry Gin
3/4 oz Green Chartreuse 
3/4 oz Maraschino Liqueur 
3/4 oz Fresh Lime Juice
Brown napkin and string
2 Luxardo Maraschino Cherries
2 Lime wedges, sliced 1/4 inch thick

Instructions

Tie napkin around base of coupe glass with string.

Add all ingredients to a shaker. Add ice and shake for 15 seconds. Double strain into chilled coupe glass.

Cut a slit in the rind of the lime wedges and arrange as ears
Put two cherries on a cocktail pick and rest across rim of the glass for eyes. Enjoy!
Vodka & Citrus Marinated Shrimp
(must be 21 and up to enjoy)

1 cup Orange Juice
1 cup fresh Lemon Juice
¾ cup Ketchup
1/3 cup Vodka
¼ tsp Tabasco Sauce
¼ cup Olive Oil
1.5 pounds cooked peeled large Shrimp (16-20/pound)
1 small Red Onion, thinly sliced
1 cup finely chopped fresh Cilantro

Instructions

Combine the juices, ketchup, Vodka and Tabasco sauce in a large bowl. Whisk in the olive oil. Add shrimp, onion and cilantro and mix well. Cover and refrigerate at least 3 hours.

Arrange 4-5 shrimp in a martini glass with 1-2 tablespoons of the marinade. Garnish with a sliced lemon twist. Enjoy!

** Due to the citric acid, if left overnight, the shrimp will become very soft/mushy
Fruit Topped Lime Mousse Tart
(Special thank you to the Sage Family for this amazing recipe!)

Crust
1 1/2 cup All Purpose Flour
2/3 cup Slivered Almonds
2/3 cup Powdered Sugar
1/4 teaspoon salt
12 tablespoons chilled Unsalted Butter, cut into 1/2-inch pieces
4 Tbsp. cold Water

Filling
1/4 cup fresh Lime Juice
1/2 teaspoon Unflavored Gelatin
3/4 cup chilled whipping cream
5 ounces good-quality white chocolate
(such as Lindt or Baker's), chopped
1 teaspoon grated Lime zest
2 Tbsp. Sugar
2 tablespoons Sour Cream

Topping
Assorted fresh Berries (strawberries, raspberries, blueberries) 4 pints
1/3 cup (about) Apricot Jam

Instructions

Crust
Blend first 4 ingredients in food processor until nuts are ground. Add butter; cut in using on/off turns until mixture resembles fine meal. Blend in enough water until mixture begins to form clumps. Gather dough into ball; flatten into disk. Press dough evenly over bottom and up sides of 9-inch-diameter tart pan with removable bottom. Freeze crust until firm, about 30 minutes.

Preheat oven to 375 degrees F. Bake crust until deep golden brown, about 30 minutes. Transfer to rack and cool.

Filling
Place lime juice in small bowl; sprinkle gelatin over. Let stand
10 minutes to soften. Bring 1/4 cup cream to simmer in medium saucepan. Reduce heat to low. Add white chocolate; stir until melted and smooth. Add gelatin mixture; stir to dissolve. Mix in lime zest. Chill until cold and beginning to thicken but not set, stirring often, about 30-45 minutes.

Beat sugar, sour cream and remaining 1/2 cup cream to medium-stiff peaks in medium bowl. Fold whipped cream mixture into white chocolate mixture. Spoon mousse into cooled crust. Chill until mousse sets, about 4
hours.

Topping
Decoratively arrange berries/fruit over the top of the mousse. Melt jam in small saucepan over low heat, stirring often. Brush enough jam over berries to glaze. Enjoy!
