PM Spirits Blanco

NOM: 1468 Tequila Matchmaker Rating: 87/100
At PM Spirits, we're always on the lookout not just for superlative spirits, but also for like-minded people. When we met Jose Luis Gutierrez, we knew right away he was someone special. Having spent years working both independently and for the Mexican Trade Commission throughout Europe – promoting and establishing reciprocity of the Tequila Denomination of Origin – Jose Luis later started working closely with producers in Jalisco in order to source and provide quality Tequila directly to European brands and bottlers. We had been wanting to collaborate with someone on bottling a PM Spirits Project Tequila for quite some time. Jose Luis' passion for and knowledge of the spirit was apparent to us from day one, and we could think of no better person to have worked with to make this project happen. Thank you, Jose Luis. Each bottling is the product of one single oven, or horno. Distilled from 100% estate grown Blue Weber Agave. No additives, ever.

Pessimest
by Daou
Red Blend
Paso robles
2021
$25.99 reg. $29.99
A Pessimest Is Never Disappointed
The 2021 vintage delivers yet another stunning blend with trademark Pessimist flair. This wine is powerful and intensely aromatic out of the glass, presenting fragrances of blueberry, boysenberry and black plum. Secondary layers reveal elderberry, truffle, cocoa and cardamom spice accented by hints of eucalyptus, leather, cherry pipe tobacco and grilled meats. Broad and expansive on the palate, it bestows lush, generous flavors of black cherry, blueberry crème de cassis and damp forest floor. Hints of lavender, anise and black olive complement the rich, ripe fruit flavors. Massive in weight yet elegantly structured, this wine is a powerhouse that reveals itself gradually yet deliberately. It finishes smoothly with leisure and length, on notes of blackberry, espresso bean and pomegranate.
Blend: 76% Petite Sirah • 12% Zinfandel • 10% Syrah • 2% Lagrein

From the Vault: Chardonnay
These will be the wines sampled on April 1st
Vini Franchetti
Passopisciaro
Passobianco
2018
$39.99
Its complexities bring together the specific light, drastic changes in temperature, altitude, and volcanic influences of Etna, and the choice of Chardonnay was meant to allow these influences to meld and evolve over time as the white ages, inspired by the aging potential of the great whites of Burgundy. The harvest is quite fussy, as we pick little portions of the vineyard every day, tasting the berries trailing along the terraces day after day, harvesting only when each individual cluster is ripe. The resulting wine is rich yet fresh, bright yet layered.
Louis Jadot
Domaine Gagey
Ladoix
" Le Clou D'Orge"
2020
$52.99
The Jadot Ladoix Le Clou d'Orge unfolds in the glass with nuances lemon oil, crisp white peach and wet stones. Medium to full-bodied, satiny and incisive, it's deep but chiseled, with fine concentration, racy acids and a long, mineral finish.
Louis Jadot
Domaine Louis Jadot
Pernand-Vergelesses
"Clos De La Croix De Pierre"
2020
$56.99
The 2020 Pernand-Vergelesses 1er Cru Clos de la Croix de Pierre Blanc (Domaine des Héritiers Jadot) is especially good this year, wafting from the glass with notes of waxy citrus rind, crisp orchard fruit, pastry cream and smoke. Medium to full-bodied, bright and precise, with tangy acids and a pretty core of fruit, it's beautifully balanced.
Antinori
Castello Della Sala
Cervaro
2019
$59.99
A full-bodied white with complex aromas of hawthorn, ripe peach, apricot, mango, lime, flint, toast and some smoke. Layered, concentrated and persistent with bright acidity and a firm, phenolic texture. Hint of vanilla. Very long and refined. Beautiful as always. Very approachable, but better from 2022. 97 points Robert Parker
Albert Bichot
Domaine Long-Depaquit
Chablis Premier Cru
Les Vaucopins
2020
$71.99
This wine features an expressive, rather powerful nose that is predominantly mineral. Milk caramel notes combine with elegant, refined nuances of oak. A hint of sucrosity on the palate with flavors of candied fruit, apricot, and quince. This beautiful, full-bodied wine finishes on a generous, slightly acidic note. The varied and sustained aromatic pallet of this great wine allows a double vocation. As an aperitif or for a convivial meal. It will pair well with seafood, scallops, fish and white meats.
Domaine Lucien Boillot
Puligny-Montrachet
1er cru "Les Perrieres"
2017
$149.99
When a little parcel of Perrières was for sale in 2006, Pierre Boillot hedged his offer by proposing a parcel of his Volnay vines to the seller. Despite a series of unlikely events involving a committee of proud Puligny residents who clamored to protect the parcel from an “outsider,” Pierre’s offer turned out to be too good to pass up, and he acquired the vines. This white is a rare pearl: floral on the nose, with volume and roundness on the palate, and a long, long finish.
Evening Land
Summum
Seven Springs Estate
Chardonnay
2018
$99.99
The Estate Chardonnay comes from a unique block of young vines at the southern edge of Seven Springs. With vines running right up to a rich forest of Douglas fir, these Burgundian clones of Chardonnay face northwest with a view across the entire vineyard. The Seven Springs Chardonnay underwent a very gentle whole cluster press before being racked to French oak barrels for fermentation. The wine remained in barrel, roughly 30% of which was new, for 12 months before being racked to tank. The wine completed élevage in tank for another 6 months before bottlin
Fisher Vineyards
Mountain Estate Vineyard
Chardonnay
2016
$74.99
Fisher's 2016 Chardonnay Mountain Estate Vineyard is bold, luscious and absolutely delicious. Orange peel, lemon confit, apricot, mint, chamomile and lightly honeyed notes all flesh out in this ample, super-expressive Chardonnay. Classy and polished, the Mountain Estate is also the more understated of the two Fisher Chardonnays.
Lucia
Sobranes Vineyard
Chardonnay
2017
$74.99
This is filled with poached pear, fresh-cut apple and quince flavors that are bound together by fresh acidity. Dried savory and citrus accents show on the complex finish.
Drink now through 2024.
Staglin Family Vineyards
Salus
Chardonnay
2016
$52.99
The 2016 Salus Chardonnay displays an elemental gold color and comes out swinging. Sun-ripened lemons, poached pears and tropical blossoms pour onto a medium-bodied palate of yellow orchard fruit, honeyed mango and citrus oil spiced by touches of vanilla, clove and subtle oak. This youthful and precocious wine is drinking deliciously now and should develop additional refinement with a little time in bottle.
Mount Eden Vineyards
Domaine Eden
Chardonnay
2015
$47.99
Lovely perfume of lemon, hazelnut, and vanilla, this Chardonnay gives way to a powerful palate with all-important minerality. The mountain terroir is especially evident in the lingering finish. This small-yield vintage is a good candidate for the cellar so expect a peak in 2022 and beyond.
Robert Mondavi Winery
Napa Valley
Chardonnay
2018
$39.99
This classic Napa Valley blend brings together the best AVAs for Chardonnay. The blend is dominated by fruit from the cooler regions in the southern end of the valley, where bay fog and breezes allow the grapes to ripen at a gradual, flavor-building pace while retaining refreshing, natural acidity. A small amount of fruit from our Wappo Hill vineyard, in the Stag's Leap District, adds just the right touch of opulence to the blend, with other excellent Chardonnay vineyards giving their textures and tastes to the final wine.

Brewery Spotlight:
Brasserie Blaugies
|
|
After several years of absence, we are pleased to welcome Brasserie Blaugies back to our shelves!
Tucked just inside the Belgian province of Hainaut along the French border, Blaugies has been producing some of the finest saisons in the world since 1988. Schoolteachers Pierre-Alex and Marie-Noelle Carlier-Portois first started brewing on a tiny setup in their small farmhouse garage, perfecting the recipes that would eventually become their flagship La Moneuse, Darbyste, d'Epeautre, and La Vermontoise saisons.
While their operation has expanded to include their son, Kevin (including his wife and father-in-law), the production of Blaugies beers remained on the tiny garage brewhouse up until 2018/19 when they finally opened a large, state of the art brewery right next door after acquiring land from a gracious neighbor.
I had the remarkable opportunity to visit Blaugies last year. Pierre-Alex, Marie-Noelle, and Kevin were extremely warm, kind and incredibly generous hosts. They showed us the original farmhouse garage brewery and let us wander their bright, shiny new brewhouse which, due to the pandemic, they were very eager to show us since they hadn't been much able to prior to our visit.
After the tour we congregated to the center of the brewery were Pierre-Alex, standing from a forklift bearing a pallet full of various bottles of their beer exclaimed, "Now we drink!" For the next few hours we popped bottles freely, shared stories, and sipped away the late morning under the bright lights of one of the most formidable saison breweries in the world. We were then treated to a delicious multiple-course lunch at their adjacent restaurant, Le Fourquet, with...of course, more delicious Blaugies beer

Darbyste Saison
$13.99 | 750ml
Wheat-based saison fermented with a touch of fig juice. Similar to a Belgian “Wit” or “Blanche” style, but a little drier and a lot more substantial and flavorful. The fig note is subtle lending a touch of fruit without being sweet.
La Vermontoise Saison
$13.99 | 750ml
A spelt saison brewed with Amarillo hops. Brewed in collaboration with Hill Farmstead. The Hill Farmstead brewers traveled to Brasserie de Blaugies to share in the kindred bond of farmhouse brewing. The result is this classic saison brewed with spelt and an abundance of Amarillo hops. A true expression of noble Belgian tradition and artistic American innovation from the families at Brasseries de Blaugies and Hill Farmstead.
Saison d'Epeautre
$10.99 | 375ml
Saison made with spelt and barley. Very dry and light in body, with a hint of wheaty tartness and a hardy texture that expresses the character of spelt, a primitive strain of wheat.
|
|
Blaugies Tulip and Cervoise Glassware
$10.99
|
|
The original Blaugies brewery crammed into the garage of the family farmhouse. All production operations took place here from 1988 until 2018/19.
|
|
The new brewery located on property just behind the house. The land originally belonged to a neighbor who graciously turned over to Blaugies allowing them to build the expansion.
|
|
What a treat tasting these beers in a state of freshness we never get to experience here in the US. While I've never had two bottles of Blaugies taste the same anyway, they are even different all together before they make their long exportation journey.
