Easy

This fresh salsa brings heat to your summer taco spread with jalapeño peppers, but it also brings unexpected sweetness from the strawberries and crunch from the jicama. Lime juice adds a zesty zing, and mint gives it a burst of coolness—just what you need next time you're looking for a quick, no-cook appetizer or snack to serve at a barbecue.
Ingredients
  • 5 medium strawberries, chopped
  • ¼ cup uncooked jicama, diced
  • 1½ tbsp fresh mint leaves
  • 1 tbsp Jalapeño peppers, finely chopped (or less to taste; discard seeds)
  • ¼ tsp lime zest
  • 2 tsp fresh lime juice
  • 1 pinch table salt, or to taste
  • 9 tortilla chips

Instructions
  1. In a small bowl, combine all ingredients except salt and chips, then season to taste with salt. Scoop up salsa with chips.
  2. Makes 1 serving.
