As the temperature dips and the days get shorter - it's only natural we crave warm, comfort food.

In fact, according to the ancient system of medicine called Ayurveda, the change of seasons is an important time for increased self-care, reflection, and healthy nutrition to support this transition.

Particularly, when we go from the warmer weather of summer to the cooler temperatures of fall, our bodies tend to dry and deplete.

Including more nourishing foods like soups, proteins, and steamed vegetables can help.

Here is a super quick soup recipe that I learned a few years back. It's so easy to make and a hit with the entire family.

Creamy Zucchini Soup

Super simple and delicious, this soup is a great way to increase your veggies.
Have it for lunch, as an appetizer for dinner, or as a snack to warm you up. 

The Essentials:

  • 4 medium zucchinis
  • 1 large onion
  • 2 garlic cloves
  • 1 tbsp olive oil
  • salt and pepper for seasoning

The How-To's:

  1. Roughly chop zucchinis and onion and place in the steamer basket.
  2. Steam the vegetables for 10-12 minutes.
  3. Combine all ingredients in a blender and blend until you reach a smooth consistency.
