Cucumber Noodle, Watermelon and Feta Salad

Nothing says summer like fresh, delicious salads!

This is one of my favourites to serve as a side, bring to a socially-distanced BBQ, or enjoy for lunch with grilled chicken.

This recipe uses a spiralizer. Here's one from Amazon so you can see what it looks like. Click Here

If you don't have a spiralizer, you can find one at any kitchen or health food store. You can use it on all sorts of veggies including carrots, sweet potatoes, and zucchini.

It's one of my most-used kitchen tools, and one way I can involve the kids in prepping veggies.

If you don't have one, no worries! Instead of spiralizing the cucumbers, you can chop into coins or small pieces.

Cucumber Noodle, Watermelon and Feta Salad
  • Prep Time: 15 Min.
The Essentials:
  • 1 large seedless English cucumber
  • 3 cups cubed watermelon (1/2 inch pieces)
  • 1/3 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves thinly sliced
  • juice of 1 lime

The How To's:

  1. Spiralize the cucumber into noodles.
  2. Place in a large bowl.
  3. Add the watermelon cubes, feta cheese and mint.
  4. Squeeze fresh lime juice over the salad.
  5. Serve immediately.

(Chopped red onion also gives it a nice taste, but is totally optional.)
